Golden grilled cheese with spicy pepper jack and fresh tomato on jalapeño bread

# What You’ll Need:

→ Bread

01 - 4 slices jalapeño-studded bread

→ Cheese

02 - 4 slices pepper jack cheese

→ Vegetables

03 - 1 medium ripe tomato, thinly sliced

→ Spreads & Fats

04 - 2 tablespoons unsalted butter, softened

→ Seasonings

05 - Pinch of salt
06 - Freshly ground black pepper to taste

# How to Make It:

01 - Lay out all bread slices on a clean work surface. Generously butter one side of each slice using softened butter.
02 - Place two bread slices buttered side down. Layer each with 2 slices pepper jack cheese and distribute half the tomato slices evenly. Season tomatoes with salt and freshly ground black pepper if desired. Top with remaining bread slices, buttered side up.
03 - Preheat a large nonstick skillet or griddle over medium heat for 2-3 minutes until properly heated.
04 - Transfer sandwiches to the hot skillet. Cook for 3-4 minutes on the first side, pressing gently with a spatula to ensure even contact. Flip carefully and cook an additional 3-4 minutes until bread achieves deep golden brown color and cheese is completely melted.
05 - Remove sandwiches from skillet and let rest for 1 minute to allow cheese to set. Slice each sandwich diagonally in half and serve immediately while hot.

# Expert Tips:

01 -
  • The jalapeño bread adds layers of heat that sneak up on you

  • Takes less than 15 minutes from start to first bite
02 -
  • Medium heat is your friend, high heat burns the bread before the cheese melts
  • Thin tomato slices are crucial or the sandwich falls apart when you flip it
03 -
  • A cast iron skillet creates the most even, golden crust
  • Covering the pan with a lid for the last minute helps melt stubborn cheese
